And if you can't have sugar...

Try these uH-maze-ing muffins.
So good that Dan ate 4 , Ally ate 3, I ate 2, and Hudson ate 1 (well, almost 1).

Delicious SUGAR FREE blueberry muffins:

2 cups whole wheat flour

2 tsp. baking powder

1/4 tsp. salt

1/2 cup light margerine, softened

1 cup splenda

1/4 cup honey

2 large eggs

1 tsp. vanilla

1/2 cup milk

1 cup fresh blueberries

1. Preheat oven to 400. Line 12 muffin cups with paper liners. Lightly spray liners with non stick cooking spray. I like Bak-klene from Williams-Sonoma.

2. Mix flour, baking powder and salt. Set aside.

3. Beat margerine at medium speed until creamy. Gradually add splenda and honey, beating until light and fluffy. Add eggs one at a time, beating until blended after each addition. Stir in vanilla. Alternately add flour mixture and milk. Beat at low speed after each addition. Fold in berries.

4. Spoon batter evenly into paper lined muffin cups. Bake 20-22 minutes or until golden.

Enjoy!
